These banana pancakes are proof that simple ingredients can create pure magic.

Ingredients
1 banana, mashed
1 egg
1 tbsp buckwheat flour
1/4 tsp cinnamon
1 tsp flax meal
1 tsp cacao powder
extra virgin olive oil
1 tbsp dark choc chips
maple syrup, topping
sliced banana, topping
toasted coconut flakes, topping
sprinkle cinnamon, topping
Preparation
Step 1
To a mixing bowl, add all ingredients (except for the toppings) and mix until well combined.
Step 2
Heat a fry pan over low heat and add a drizzle of extra virgin olive oil.
Step 3
While the pan is warming up, let the batter rest for a minute or so—this helps the texture settle.
Step 4
Scoop the mixture into the pan, forming 3 small pancakes.
Step 5
Cook for about 2 minutes or until bubbles start to form on the surface. Flip gently and cook for another minute, or until golden and cooked through.
Step 6
Transfer to a plate and serve warm with maple syrup, sliced banana, toasted coconut flakes and cinnamon.
