Apple Pear Walnut Buckwheat Crumble

About the Recipe

There’s just something about beautifully baked apple and pear with warm spices like cinnamon, ginger, nutmeg and cardamom.

This crumble is made with oats, walnuts, buckwheat, collagen and a little tahini drizzle on top, so it’s not just delicious — it’s actually really nourishing too.

It’s perfect for breakfast or dessert, and you can serve it with coconut yoghurt, or vanilla ice cream if you want more of a dessert vibe.

This recipe actually has 18 different plant foods in it, which all counts towards your 30 plants a week for gut diversity.

It’s cosy, it’s meal prep friendly, and honestly eating healthy doesn’t get much better than this.

Ingredients

Bottom Layer

  • 2 large green apples (½ diced, ½ thinly sliced)

  • 1 ripe pear, diced

  • 1½ tbsp tapioca starch

  • 1 tbsp lemon juice

  • pinch nutmeg

  • pinch cardamom

  • pinch celtic salt

  • ½ tsp cinnamon

  • ½ tsp ground ginger

  • 1 tbsp chia seeds

  • ½ tsp vanilla extract

Top Layer

  • 1 cup wheat free oats

  • 1/3 cup almond meal

  • 2 tbsp buckwheat groats

  • 1/4 cup walnuts, roughly chopped

  • 1 tbsp hemp seeds

  • 2 tbsp collagen powder

  • 2 tbsp coconut oil, melted

  • 1 tbsp coconut sugar

  • 2 tbsp maple syrup

  • 1 tbsp extra buckwheat groats

  • 1 tbsp tahini

Serving

  • coconut yoghurt

  • hemp seeds

Preparation

Step 1

Preheat oven to 180°C. Line a square baking tray with a silicone sheet.


Step 2

In a large bowl, combine diced apples, pear, tapioca, lemon juice, spices, salt, chia seeds and vanilla. Toss until evenly coated.


Step 3

Arrange the thinly sliced apple as a layer on the base of the baking tray, then spread the remaining fruit mixture evenly over the top.


Step 4

In a medium bowl, combine oats, almond meal, buckwheat groats, walnuts, hemp seeds and collagen powder.


Step 5

In a small bowl, whisk maple syrup and melted coconut oil. Pour over dry ingredients and mix until crumbly.


Step 6

Spread the crumble mixture evenly over the fruit and gently press down to compress slightly.


Step 7

Sprinkle extra buckwheat groats over the top, then drizzle tahini lightly across the crumble.


Step 8

Bake for 30–35 minutes, until golden and the fruit is bubbling underneath.


Step 9

Allow to cool for at least 15 minutes before slicing.


Step 10

Serve with coconut yoghurt and extra hemp seeds.
