Ingredients

INGREDIENTS - ALMOND PASTE FILLING

  • 1 tsp almond butter

  • 1 tbsp + ½ tsp wheat free oat flour

  • 2 tsp honey

INGREDIENTS - BAKED OATS BASE

  • ⅓ cup wheat free oat flour

  • 2 tsp honey

  • 1 tbsp maca powder

  • ¼ tsp baking powder

  • 3 tbsp coconut yoghurt

  • ⅓ cup almond milk

  • 1 tsp vanilla extract

  • 1 tbsp slivered almonds

Preparation

Step 1

Preheat your oven to 180ºC.


Step 2

In a small bowl, mix together all Almond Paste Filling ingredients until smooth and thick. Set aside.


Step 3

In another bowl, combine all Baked Oats Base ingredients—except the slivered almonds—until well mixed and creamy.


Step 4

Pour half the baked oats mixture into a small ramekin.


Step 5

Spoon the almond paste filling into the centre, then top with the remaining oat mixture.


Step 6

Sprinkle slivered almonds over the top for that classic croissant inspired crunch.


Step 7

Bake for 30-35 minutes, or until the top is golden and the centre is just set.


Step 8

Allow to cool slightly before digging in. Serve warm.
