These Tofu Almond Satay Rice Paper Rolls are one of those meals that truly nourish from the inside out.

Ingredients
INGREDIENTS ROLLS:
8 rice paper sheets
1 tsp sesame oil
300g firm tofu, crumbled
4 tbsp tamari
pepper, pinch
celtic salt, pinch
1 medium carrot, julienned
3 baby cucumbers, cut into matchsticks
2 spring onions, thinly sliced
1 cup finely shredded purple cabbage
butter lettuce leaves
1 avocado, thinly sliced
a handful of fresh coriander
sesame seeds, for topping
INGREDIENTS DIPPING SAUCE:
2 tbsp almond butter
1 tbsp tamari
juice of ½ lime
1 garlic clove, minced
1-2 tbsp warm water (optional, to thin)
Preparation
Step 1
Cut tofu in half, place between a clean tea towel. Add a heavy object onto. This allows the moisture to be absorbed making the tofu crispy and not soggy. Leave for 10 minutes.
Step 2
Heat sesame oil in a non stick pan over medium heat. Add crumbled tofu, tamari, salt, and pepper. Sauté for 6–8 minutes, stirring occasionally, until golden and slightly crispy. Set aside to cool.
Step 3
In a small bowl, mix together almond butter, tamari, lime juice, and minced garlic. Set aside.
Step 4
While the tofu cools, prep all fresh ingredients. Have everything laid out and ready to go.
Step 5
Fill a shallow plate with warm water. Dip one rice paper sheet in for 5 seconds until softened. Lay flat on a clean plate.
Step 6
Start with a lettuce leaf, then layer in tofu, carrot, cucumber, cabbage, spring onion, avocado, coriander, and sprinkle sesame seeds. Fold in the sides and roll tightly from the bottom up.
Step 7
Repeat with remaining ingredients. Serve fresh with the almond satay dipping sauce.
