About the Recipe

This vibrant chicken salad is thoughtfully balanced with protein, healthy fats, and fibre rich carbohydrates—designed to support energy, digestion, and overall wellbeing.

Ingredients

  • 1 kg chicken breast, sliced into strips

  • 1 tsp celtic salt

  • ¼ tsp black pepper

  • 1 tsp paprika

  • 2 tbsp extra virgin olive oil

  • 2 tbsp coconut oil

  • 4 garlic cloves, finely chopped

  • 2 tbsp fresh ginger, grated

  • 4 tbsp tamari

  • 2 tbsp fresh lime juice

  • 1 tsp chilli flakes (adjust to taste)

  • 2 green capsicums, finely chopped

  • 2 carrots, julienned

  • 8 spring onions, white parts and half the green, sliced

  • 100g mixed salad leaves

  • Lime wedges, for garnish

  • Sesame seeds, for garnish

Preparation

Step 1

In a large bowl, coat the chicken strips with olive oil, salt, pepper, and paprika.


Step 2

Heat coconut oil in a skillet over medium heat. Add the chicken and cook for 5 minutes, stirring occasionally.


Step 3

Add the garlic and ginger, cooking for another 2 minutes.


Step 4

Stir in the tamari, lime juice, and chilli flakes, ensuring the chicken is well coated.


Step 5

Add the capsicum, carrot, and spring onions, tossing everything together. Cook for 2-3 minutes until the vegetables are slightly tender but still crisp.


Step 6

Serve over a bed of mixed greens, garnish with a lime wedge and sesame seeds.
