Ingredients
Cookie Layer
1 cup almond flour
1/8 tsp celtic salt
1/8 tsp baking soda
1 tbsp maple syrup
1 1/2 tbsp melted coconut oil
1 tsp vanilla extract
Caramel Layer
1 cup dates, pitted and soaked in hot water for 10-20 mins, then drained
2 tsps coconut oil
3 tbsps almond butter
1/8 tsp vanilla extract
Chocolate Layer
1-2 cup dark chocolate (min 80% cocoa)
1/2 tbsp coconut oil
Preparation
Cookie Layer
Step 1
In a bowl, combine all cookie ingredients and mix until a dough forms. Use your hands to bring it together into a ball.
Step 2
Chill the dough in the fridge for 10 minutes.
Step 3
Roll out the dough into a large rectangle on a silicone baking sheet.
Step 4
Freeze for 15 minutes to firm up.
Step 5
While still chilled, bake at 180ºC for 10 minutes or until lightly golden. Allow to cool completely.
Caramel Layer
Step 1
Add the soaked dates, coconut oil, almond butter, and vanilla to a food processor.
Step 2
Blend until smooth, thick, and creamy.
Assembly
Step 1
Spread the caramel layer evenly over the cooled cookie base.
Step 2
Melt chocolate and coconut oil in a microwave safe bowl in 30–50 second bursts, stirring in between, until smooth.
Step 3
Pour the chocolate over the caramel layer, spreading to cover.
Step 4
Place in the fridge to set for at least 2 hour.
Step 5
Once firm, slice into bars and enjoy!
