About the Recipe
Need a GF, DF & RSF option for a peanut butter bar well, let me introduce you to the healthy version AKA peanut butter slice.
Base: Almond meal, coconut oil, maple syrup, a pinch of salt, and vanilla.
Peanut Butter Layer: Creamy peanut butter, maple syrup, coconut oil, and a dash of vanilla.
Chocolate Top: Cacao powder, maple syrup, and melted coconut oil for that perfect finish.

Ingredients
BASE
2 cup almond meal
3 tbsp melted coconut oil
3 tbsp maple syrup
pinch of celtic salt
1/4 tsp vanilla extract
PEANUT BUTTER LAYER
1/2 cup peanut butter
1/4 cup maple syrup
1/4 cup coconut oil
1/4 tsp vanilla extract
CHOCOLATE TOP
1/2 cup cacao powder
1/4 cup maple syrup
1/2 cup coconut oil, melted
Preparation
Step 1
Preheat the oven to 180ºC.
Step 2
In a medium mixing bowl, combine all ingredients for the base and mix until well blended.
Step 3
Press the base mixture evenly into a square baking pan. Bake for 10 minutes, then set aside to cool.
Step 4
While the base cools, heat a pot over low heat and add the peanut butter layer ingredients. Stir continuously until fully combined and slightly thick.
Step 5
Pour the mixture evenly over the cooled base.
Step 6
Place the pan in the freezer for 30 minutes to allow the mixture to set.
Step 7
Once set, in a separate medium mixing bowl, prepare the chocolate layer by combining the top ingredients until smooth.
Step 8
Pour the chocolate mixture over the set peanut butter layer.
Step 9
Return the pan to the freezer for 15 minutes, or until fully set.
