These brownies are a good source of protein, healthy fats, fibre, and antioxidants. They provide essential vitamins and minerals like magnesium, iron, potassium, vitamin E, and B vitamins. The combination of peanut butter, olive oil, and dark chocolate also contributes to heart-healthy fats and anti-inflammatory compounds.

Ingredients
1/2 cup coconut sugar
3/4 cup GF oat flour
1/4 cup cocoa powder
1/2 cup dark chocolate chips
8 tsp peanut butter
3 eggs
1/3 cup extra virgin olive oil
1 tsp vanilla extract
1/2 tsp celtic salt
Preparation
Step 1
Preheat oven to 180ºC. Line baking pan.
Step 2
Using a standing mixer, mix eggs, coconut sugar, olive oil and vanilla extract. Once well combined.
Step 3
Stir in oat flour, salt and cocoa powder, chocolate chips.
Step 4
Pour the mixture into the baking pan.
Step 5
Add dollops of peanut butter onto the batter.
Step 6
Bake for 25 minutes or until skewer comes out clean.
