About the Recipe
Made with almond meal, a touch of orange zest, and naturally sweetened with maple syrup and honey, these cookies are soft, flavourful, and completely guilt free.
Perfect for a cozy afternoon treat or a wholesome snack!

Ingredients
2 cup almond meal
1/3 almond flour
1/2 tsp celtic salt
1/2 tsp baking powder
2 eggs
zest of 1 orange
1/8 tsp almond extract
1 tbsp maple syrup
1 tbsp honey
1/4 cup coconut oil, melted
Sliced almonds, for topping
Preparation
Step 1
Preheat oven to 180ºC. Line baking tray.
Step 2
Combine almond meal, almond flour, salt and baking powder in a bowl.
Step 3
Using a hand whisk, whisk together the eggs, maple syrup, almond extract, coconut oil, orange zest and honey in a separate bowl.
Step 4
Combine the wet and dry ingredients and stir well until you have a nice dough.
Step 5
Place the dough in the fridge for 5 minutes, this will make it easier to work with.
Step 6
Roll tablespoons of dough together with your hands and press lightly onto the lined tray.
Step 7
Add sliced almonds to the top of each cookie and slightly press into the cookie.
Step 8
Bake for 12-15 mins or until golden.
