50g ghee
2 tbsp maple syrup
1/3 cup almond flour
1 tsp baking powder
1/2 cup cranberries
1 egg, whisked
Preparation
Step 1
Pre-heat the oven to 180ºC. Line a baking tray.
Step 2
Spread oats on the baking tray. Bake for 10 minutes or until lightly toasted.
Step 3
Meanwhile melt the ghee and maple syrup in a small pot over medium heat.
Step 4
Once the oats are toasted, transfer to a large bowl. Stir in the almond flour, baking powder and cranberries.
Step 5
Once the ghee and maple mixture has cooled down, stir egg into the mixture, then add the oat mixture and stir well.
Step 6
Place mixture in the fridge for 5 minutes, this will make it easier to work with and not so sticky. Shape mixture into small balls and flatten.
