When life gives you lemons… you make a slice that tastes like sunshine
A golden almond crust, silky lemon filling, and that perfect balance of sweet and tangy — this is food as love.

Ingredients
INGREDIENTS - CRUST
2 cups almond flour
1/3 cup maple syrup
INGREDIENTS - FILLING
4 large eggs
1 tbsp maple syrup
2/3 cup lemon juice
1/4 cup almond flour
1/2 tsp baking powder
pinch of celtic salt
zest from 1 lemon
Preparation
Step 1
Preheat your oven to 180°C and line a square baking dish with a silicone sheet.
Step 2
In a medium bowl, combine the almond flour and maple syrup to form the crust mixture.
Step 3
Press the mixture evenly into the base of the prepared dish. Use a fork to prick holes in the base, then bake for around 20 minutes or until lightly golden.
Step 4
While the crust is baking, whisk together all filling ingredients in a large bowl until smooth and well combined.
Step 5
Once the crust is baked, carefully pour the filling over the warm base.
Step 6
Return to the oven and bake for 25–30 minutes, or until the filling is just set and no longer jiggles in the centre.
Step 7
Allow to cool completely at room temperature, then transfer to the fridge for at least 4 hours to fully set.
Step 8
Slice into squares, serve chilled, and enjoy every zingy bite!
