I don’t know about you, but you’ll always have me at cookie dough.
These Cookie Dough Choc Chip Bites are the ultimate sweet treat—sweet, indulgent, and perfectly bite sized.

Ingredients

INGREDIENTS - COOKIE DOUGH

  • 1/2 cup medjool dates

  • 400g can chickpeas, drained and rinsed

  • 1/3 cup peanut butter, smooth

  • 1/4 cup almond milk

  • 1/4 cup maple syrup

  • 1/3 cup dark chocolate chips


INGREDIENTS - CHOCOLATE

  • 1/4 cup cacao powder

  • 2 tbps maple syrup

  • 1/4 cup coconut oil, melted

Preparation

Step 1

Soak dates in boiling water for 5 minutes. Drain. Set aside.


Step 2

Mix the cacao powder, maple syrup and coconut oil in a small mixing bowl until well combined. If It’s too thick, add to the microwave for 10 seconds to melt it.


Step 3

Add a drop of chocolate to the bottom of each cupcake, in a cupcake tray (Silicone works best). Place in the freezer.


Step 4

In a food processor, add all cookie dough ingredients (except for the chocolate chips) and mix until thick and smooth.


Step 5

Add the chocolate chips to the mixture, mix through with a spoon. (Reduces the need for using another bowl = less cleaning! Winning!!)


Step 6

Remove the cupcake tray from the freezer. Add a layer of cookie dough onto of the set chocolate.


Step 7

Add a final layer of chocolate on top of the cookie dough.


Step 8

Place in the fridge for about 2 hours, or until the chocolate has set.
