Cherry Cloud Marshmallows

About the Recipe

These Cherry Cloud Marshmallows are soft, bouncy, and naturally sweetened — no weird additives here.
No artificial colours, flavours, or weird chemicals here — just pure, whole food joy.

Make a batch, layer them in a jar, and gift them (or... keep them all to yourself, no judgment).

Ingredients

  • 1/2 cup filtered water (for blooming)

  • 1/2 cup filtered water (for cherry syrup)

  • 3 tbsp grass fed gelatin - I use NesProteins Beef Gelatin

  • 1 cup frozen or fresh cherries, pitted

  • 1/2 cup maple syrup

  • Desiccated coconut, for coating marshmallows

  • 1/2 cup dark chocolate, for melting

  • 1 tsp coconut oil

Preparation

Step 1

Pour ½ cup filtered water into a stand mixer bowl. Sprinkle over gelatin and let bloom for 10 minutes.


Step 2

In a saucepan, combine cherries, 1/2 cup filtered water, and maple syrup. Heat over medium high for 5–8 minutes, stirring and gently mashing the cherries as they soften.


Step 3

Slowly pour the warm cherry mixture into the bloomed gelatin while the mixer is on low. Gradually increase to high and beat for about 8 minutes, until fluffy and glossy like marshmallow fluff.


Step 4

Quickly spread the mixture into a lined deep dish. Work fast — it sets quickly! Refrigerate for roughly 1-2 hours, until firm and bouncy (not wet to the touch).


Step 5

Tear for a rustic look or slice into pieces.


Step 6

In a bowl, toss some marshmallows in desiccated coconut. Cover and refrigerate.


Step 7

In a small bowl, melt dark chocolate with coconut oil in 30 second intervals in the microwave. Dip marshmallows and place on a silicone sheet. Chill until set.


Step 8

In a jar or container, layer the plain, coconut coated, and chocolate dipped marshmallows for a fun, gift worthy look.
