About the Recipe

Quick, easy, and absolutely delicious, they’re a great way to fuel your day (whether it’s full of romance or just you and your favourite playlist 😘).
Bonus: your kitchen will smell AMAZING!

Blend up some muffin magic for Valentine’s morning.

Ingredients

  • 1 cup wheat free oats

  • 1 cup almond meal

  • 1/3 cup desiccated coconut

  • 1 tsp baking powder

  • 2 eggs

  • 2 bananas

  • 1/4 cup maple syrup

  • 1/3 cup coconut yoghurt

  • 1/2 tsp ground cinnamon

Preparation

Step 1

Pre heat oven to 180ºC. Spray muffin pan with extra virgin olive oil.


Step 2

Add the following ingredients to a high speed blender; oats, almond meal, coconut, baking powder. Blend until well combined.


Step 3

Add eggs, banana, maple syrup, yoghurt. Blend until smooth.


Step 4

Pour into prepared muffin pan.


Step 5

Sprinkle each cupcake with cinnamon.


Step 6

Bake for 25 minutes or until a skewer comes out clean.
