Meet the new obsession: Beanie Blondies!
These tasty treats sneak in cannellini beans for a boost of nutrition—trust me, you won't even notice!
And guess what? Even the guys couldn’t resist these gluten free, dairy free, and refined sugar free bites!
Who says you have to choose between taste and health??? Not me!

Ingredients
400g cannellini Beans, drained and rinsed
2 eggs
1/4 cup coconut oil, melted
1/2 cup maple syrup
1 tsp vanilla extract
1 cup almond meal
2 tsp baking powder
1 tsp ground cinnamon
pinch celtic salt
Preparation
Step 1
Pre-heat the oven to 180ºC. Line a 30cm square baking pan.
Step 2
Add beans. Eggs, coconut oil, maple syrup and vanilla to a blender and blend until smooth.
Step 3
Add mixture to a large mixing bowl. Add in the almond meal, baking powder, cinnamon and mix well.
Step 4
Pour the batter into the baking pan. Bake for 20-30 minutes or until a skewer comes out clean.
Step 5
Allow the blondie to cool in the tin. Once cooled, remove from the pan, slice and serve.
