About the Recipe
These Banana, Walnut & Date Muffins are the perfect way to use up those spotty bananas and hit the sweet spot—without the sugar crash.
Naturally sweet, full of fibre and healthy fats… trust me, your kitchen will smell amazing while these bake!

Ingredients
2 cup almond meal
2 tsp baking powder
1 tbsp cinnamon
8 medjool date, pitted and chopped
3 bananas
3 eggs
1/4 cup coconut oil, melted
3/4 cup walnuts, chopped
1 tbsp chia seeds, topping
1/2 banana, sliced, topping
almond butter, serving
Preparation
Step 1
Preheat oven to 180°C. Coat a muffin tray with extra virgin olive oil.
Step 2
In a large bowl, combine the almond meal, baking soda, a punch of celtic salt and cinnamon.
Step 3
In a blender, combine the dates, banana, eggs and melted coconut oil.
Step 4
Add the wet mixture to the dry mixture and stir to combine. Fold through the chopped walnuts. Once combined, spoon the mixture into the muffin tins. Top with sliced banana and a sprinkle of chia seeds.
Step 5
Bake for 20-25 minutes, or until the muffins are golden and cooked through.
Step 6
Once ready, serve the muffins warm with a smear of almond butter.
