Elevate your snack game with these scrumptious Almond Cookies!
Perfectly sweet, premium almond goodness and irresistibly chewy.

Ingredients
1/3 cup coconut sugar
6 tbsp ghee
1 large organic egg
1 tsp almond extract
2 cups almond flour
1 tsp coconut oil
1/4 tsp salt
1 tsp baking powder
Handful sliced almonds, for topping
Preparation
Step 1
Pre-heat oven to 180º and line with a silicone sheet, or baking paper.
Step 2
In a large bowl, using a hand beater, cream ghee and coconut sugar until light and fluffy (about 2-3 minutes).
Step 3
Add the egg and almond extract. Whisk again until combined.
Step 4
Add almond flour, baking powder and salt to wet ingredients and stir using a spoon until just combined.
Step 5
Scoop dough into 12 even balls using a tablespoon. Top with almonds and press down slightly.
Step 6
Bake for 10 minutes, or until edges are slightly browned.
Step 7
Let cookies cool for about 5 minutes on baking sheet before transferring to a wire rack to cool completely.
