Think almond croissant vibes… but in slice form.
Made with almond meal, coconut, maple, vanilla and topped with a dreamy almond paste & flaked almonds. Perfect with a cuppa or for that mid arvo pick me up.

Ingredients
INGREDIENTS - MAIN
1 1/3 cup almond meal
1/4 cup flaked almonds
2/3 cup desiccated coconut
1 tsp vanilla extract
1 tsp baking powder
2 eggs
1/3 cup maple syrup
INGREDIENTS - ALMOND PASTE
1/2 cup almond butter
1/2 tsp almond extract
1/2 tsp vanilla extract
1 tbsp maple syrup
1 tbsp almond milk
Preparation
Step 1
Preheat oven to 180°C and grease a small baking tray.
Step 2
Mix almond meal, coconut and baking powder in one bowl.
Step 3
In another bowl, whisk eggs, maple syrup and vanilla, then combine. Spread into tray.
Step 4
In a medium bowl, stir together almond paste ingredients, spread on top of batter, sprinkle with flaked almonds.
Step 5
Bake 20–25 mins or until golden and cooked through.
Step 6
Cool and slice
