Okay, so they’re not super crunchy – but they are herby, flavour packed, and seriously moreish.
Coated in almond meal, nutritional yeast, garlic + herbs… these are fries your body will thank you for.

Perfect for dipping, stacking, or eating straight off the tray (guilty).

Ingredients

  • 2 medium zucchinis

  • 3/4 cup almond meal

  • 1/4 cup + 1 tbsp nutritional yeast

  • 1 1/2 tsp garlic powder

  • 1 tsp mixed herbs

  • 1 tsp dried marjoram or oregano

  • 1/8 tsp celtic salt

  • 2 eggs

Preparation

Step 1

Preheat oven to 200°C. Line a baking tray with a silicone sheet.


Step 2

Slice zucchini into fries.


Step 3

Mix almond meal, yeast, herbs, garlic powder, and salt in a bowl.


Step 4

Dip zucchini in beaten egg, then coat in crumb mix.


Step 5

Place on tray and bake 30 mins until golden, flipping halfway.
