Ingredients
2 red capsicums
1 tsp extra virgin olive oil
3 garlic cloves
1 tbsp tahini
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1 tsp celtic salt
3/4 cup walnuts
1 tbsp lemon juice
1/2 cup extra virgin olive oil
parsley, to serve
Preparation
Step 1
Prepare barbecue on high heat.
Step 2
Lightly brush capsicums with extra virgin olive oil.
Step 3
Barbecue capsicums, occasionally turning until entire capsicum has been charred and blistered. Transfer to a heat proof bowl, cover and set aside for 5 minutes to cool down.
Step 4
Once capsicum has cooled. Peel, seed and coarsely chop the capsicums.
Step 5
To a food processor, add garlic, cayenne pepper, cumin and celtic salt. Pulse until mixed.
Step 6
Add the capsicum, tahini, walnuts, lemon juice and oil. Pulse until the mixture is combined but still chunky.
Step 7
Serve with parsley and walnuts.
