Almond Joy Energy Balls

About the Recipe

Inspired by the classic almond joy flavour with a healthy twist

Ingredients

  • 1 cup almonds

  • 1/2 cup shredded coconut

  • 1/4 cup almond butter

  • 2 tbsps raw cacao powder

  • 1 tbsp maple syrup

  • 1/4 tsp vanilla extract

  • A pinch of sea salt

  • 12-15 whole almonds

  • Water (if needed, to help bind the mixture)

Preparation

Step 1

In a food processor, pulse the almonds until finely chopped.


Step 2

Add the shredded coconut, almond butter, cacao powder, maple syrup, vanilla, and a pinch of salt. Pulse until the mixture begins to stick together. If needed, add a small amount of water to help bind the mixture.


Step 3

Roll the mixture into 1 inch balls. Press a whole almond into the centre of each ball, then roll again to ensure the almond is enclosed in the middle.


Step 4

Place the balls on a parchment lined tray and refrigerate for 30 minutes to firm up.


Step 5

Keep them in the fridge for up to a week or freeze for longer storage.
